If you are having trouble getting children to eat vegetables, try out this easy homemade pasta sauce.
This is a delicious, healthy pasta sauce that ensures your little ones are getting in as much vegetables as possible. It is perfect for any fussy eaters out there and something that the whole family can enjoy, including your weaning baby! Simply serve with large pasta shapes for a tasty baby led weaning meal your little one will love.
This pasta sauce is also great to batch cook; pop it in the freezer and defrost it overnight and your child’s school lunch is ready in no time.
Cook time: 45 minutes
Makes: 4 Adult portions
Ingredients
2 onions, finely chopped
2 courgettes, sliced
1 red pepper, finely chopped
4 stalks of celery, roughly chopped
3 carrots, peeled and roughly chopped
1 tbsp of olive oil
2 cloves of garlic, minced
1 tbsp oregano
2 x 400g tins chopped tomatoes
Method
1. In a large pan heat the olive oil and sauté the onions and the garlic.
2. Once the onions have begun to turn translucent add in the rest of the vegetables with the oregano and cook for 5-6 minutes.
3. Add the chopped tomatoes; bring the mixture to the boil before simmering for 35-40 minutes.
4. Once the vegetables are fully cooked and the tomatoes have thickened add the mixture to your blender and blend until smooth.
Weaning and Storage
6-7 months – Smooth and slightly thicker puree, no lumps
7-8 months – Thicker puree with increased texture
8-9 months – Minced and mashed with soft lumps.
9-12 months – Minced and finely chopped.
